Classing up the potato: The revaluation of regional and traditional food in Poland

This talk explores the ongoing processes of revaluation of regional and traditional ingredients, dishes, and culinary techniques that until a few years ago did not receive as much attention in Poland as they do today. It is not yet a mass phenomenon. Yet a shift is clearly visible, and it is happening rapidly, although at paces and in measures that vary according to geographical locations—above all in the long-standing socio-cultural distinction between urban areas and the countryside, education, class, and generations. We argue that this phenomenon needs to be assessed in connection both with a global circulation of images, values, and practices about what counts as "good food" and with specific local dynamics.


Fabio Parasecoli is Professor of Food Studies in the Nutrition and Food Studies Department at New York University. His research explores the intersections among food and cultural politics, particularly in media and design. Recent books include Feasting Our Eyes: Food, Film, and Cultural Citizenship in the US (2016, authored with Laura Lindenfeld), Knowing Where It Comes From: Labeling Traditional Foods to Compete in a Global Market (2017) and Food (2019).
